Saturday Morning Culinary Workshops

From the ethnic cuisines they were raised with to stories of culinary adventurousness and discovery; join us Saturday mornings this February through May to taste, learn and be inspired. Each of our demonstration-style classes is limited to 25 students. All Saturday culinary workshops are held in the Drake House Studio Theater (155 Cedar Street) from 11:30 AM – 2:30 PM.

Multiple Class Discount: Members of 171 Cedar Arts Center who register for 5 classes or more at one time receive $5 off each class fee. Register by phone at 607-936-4647, or leave a note for us when you check-out online in order to receive the member, multi-class discount.

Chef Garrett Saunders of the Harbor Hotel in Watkins Glen leads off our 2015 Culinary Arts program with a fabulous – and warming – menu that he titles A Warming Dinner in Sunny Palermo. That means Sicilian specialties, arguably on a par with the best of mainland Italy. He’s planning a traditional soup, hand-made ravioli with a mixed-mushroom filling, and you’ll learn to cook an entire fish – stuffing and all. Of course there’s a special dessert, a Sicilian specialty. Come in out of the cold and enjoy learning a menu you can cook any time of the year. Garrett has spent several years cooking in an Italian restaurant so he knows his stuff.

Who better than Chef Paul Mach to present a class on Cooking with Finger Lakes Wine? For many years this Assistant Professor of Hospitality and Culinary Arts at the Pennsylvania College of Technology, has been spending part of his summers in the Finger Lakes, most notably at Hunt Country Vineyards, pairing food and wine and cooking great meals with the area’s bounty. He has not only won many teaching awards, he is the culinary creator and co-host of the PBS cooking series “You’re the Chef” (and the companion cookbook of the same name.) Chef Paul plans a program with a Spring Entertaining theme, one that will be filled with techniques and tips. And you’ll get to talk to a real live chef, not a TV image! Maybe we should call this workshop “Ask the Chef.”

Jamie Fry, Food and Beverage Manager, Penn-Wells Hotel in beautiful Wellsboro, PA will prepare A Rustic Make-Ahead Dinner. Here’s a meal that’s perfect for you, your family, or visitors you take on tours. For example, after a visit to the Grand Canyon, you and your charges will have worked up a hunger, whether they (and you) hike, climb or just gawk at this beautiful spot. Same thing for forays to other State parks such as those around Ithaca, the Glen at Watkins - even visits to the area’s wineries or museums! Being a tour guide as well as a host, it’s nice to easily pull together a memorable meal when you reach home – and in no time. This will be a menu you’ll find so useful no matter the season.

The noted area chef and old friend of 171, Brud Holland, takes us on a tasting trip through Ireland as a prelude to St. Patrick’s Day. His presentation will give you the “how-to-do-it” on braising – meats and vegetables. The technique can produce ethereal food that is cooked in a minimal amount of liquid. The latter can be stock, wine, and even pure spring water. Brud is a natural teacher and you have the opportunity to see a classically trained chef at work, and ask questions and have some delicious tastes. Then hit Wegmans-Corning (and later the farmers markets) and start cooking at home. We’ll add a tasting of some of Brud’s exclusive line of condiments, appropriately called Finger Lakes Made. Think local!

Blake Swihart, who wowed us last year with a class on fish has planned a Fish II class you’ll never forget. How about Cajun Smoked Shrimp with Remoulade; Salmon tartar on Corncakes with Crème Fraiche Drizzle (or is it “dazzle?”), Coriander-crisped Scallops with Miso on Hearty Winter Greens, and Harissa-Roasted Monkfish with Fried Capers on Sesame-Honey Greens? (So bring your honey.) He’ll start with an appetizer of Asiago Frico with Roasted Red Pepper Sauce. So come hungry. And for dessert, how about a Winter Fruit Croustade? I repeat: come hungry.

Entertaining time is fast approaching and you’ll be prepared for the visiting relatives, returning friends (with their tans), and all those occasions when you say to yourself “I ought to have a party.” Well you’ll be armed and ready thanks to Louise Richardson’s Hors D’oeuvre class. Louise is a much-in-demand area caterer and she has a sure-fire technique for planning events well in advance. She’ll share this with the class, along with her winning recipes that have proved so popular with her clients and their guests. You’ll find this selection of finger-type foods, dips and such, marvelously delicious (superlative justified). In her other life, Louise is the Communications Manager at the Chemung County SPCA office on Route 352. In her culinary class Louise will have a wonderful variety of great things, just don’t look for Hot Dogs!

Michael Lanahan joins us from The Cellar, one of the star restaurants in Corning’s Gaffer District. If you’ve been to Chef Michael’s classes you know it’s a freewheeling, laid-back experience with absolutely delicious food. And, yes, you can duplicate what he makes at home. He has planned to demonstrate New Ideas in Vegetarian Cooking – certainly a hot topic. I imagine you’ll have one or more vegetarians at your table or perhaps you’ve been there already. Here’s help from one of the most adventurous chefs around. As Michael says: “I’m nuts about the new cheese I’ve perfected – especially since it’s made with nuts!” This nut can’t wait. You are guaranteed new ideas and a fun session.

Suzanne Stack – Suzanne’s Fine Finger Lakes Cuisine will inspire you to cook in the moment (otherwise known as the season). She’ll be picking early produce and herbs that grow just outside her restaurant. She is a natural teacher and learned her craft as an assistant at Macy’s De Gustibus in the New York store working with some of the top teachers in the food world, and it shows. Suzanne has a great following right here in the Lakes. Many people think of Suzanne’s as a “special occasion” restaurant – and they are right. It has a beautiful setting: an historic farmhouse, rolling lawns, a restored barn for events such as receptions, and with perhaps the best view on Seneca Lake. Sign up early for this class.
