Join us Saturday afternoons to taste, learn, and be inspired. Each of our demonstration-style classes is limited to 25 students. All demos are held in the Drake House Studio Theater starting at 11:00AM and ending no later than 2:00PM. Samples of each plate or beverage will be shared with the audience.

Christina McKeough, a chef who, along with her husband, made a replantation for exquisite food at Hazelnut in Trumansburg. She now runs the kitchen at Graft, the Atwater Winery outpost on Franklin in midtown Watkins Glen. Known for her “small plates” acumen, she’s chosen a marvelous topic: Exploring Scallops, Clams, Mussels and More. The sea’s bounty makes even a simple meal a banquet of flavors. Christina will touch on buying, storing, and preparing a variety of these savory wonders. Great flavor bombs, and an inspiration for some grand feasts. Easy to cook too if you know the right techniques and sauces to bring out the briny flavors. Heaven!

Join the new and acclaimed chef at Corning Country Club, Garrett Saunders, for a culinary exploration with spice! How often have you bought a jar of a certain spice, used it for a recipe that interested you, then relegated it to your cabinet, and forgot it? It happens to a lot of us home cooks, and Garrett will talk about what can be unsung stars in many dishes. Take cardamom, turmeric, and peppercorns for example. Learn about different spices about how to create your very own spice blends. In these pre-spring days, when fresh herbs are an expensive luxury, spices can fill the flavor bill. Bring a small jar of your “mystery” spice and Garrett will tell all. Good tastes too.

The Three Birds chef, Jake Zansitis, takes you to the hottest food category, Pasta! Fresh and dried, students will learn how to make it, cook it and sauce it. His family has Sicilian roots that will become obvious as his class unrolls. There is something so satisfying in making your own Fettuccini, Linguini, Tortellini, Ravioli, and more. He’ll not forget the ways of using pre-made pasta sheets or superior Italian-imported boxed pasta that, when made with the right flour and technique, can enhance any eating experience. In addition, taste the cheeses that finish off most of these dishes and learn how to vary a basic sauce for your own creations.

Master Baker Anne Robinson tackles a great topic for entertainers of all ages: Baking for Brunch.  Tying in with April Fools, she’ll give you variations on a Classic Fruit Fool surely, one of the most delightful dishes in anyone’s repertoire. Anne has more up the sleeve of her Chef’s Jacket to dazzle you with. How does a Savory Scone with Cheese and Scallion sound? How about a Spring Vegetable Quiche, perhaps a classic Sticky Bun; and the most wonderful dough of all, Brioche. Anne is renowned for her Celebration Cakes that have graced weddings, birthdays and the like for several years. She also bakes desserts for Suzanne’s Fine Regional Cuisine and uses her kitchen as her pastry lab. She's just that good!

Are you ready for an afternoon of bitter spirits, hoppy beers, and grape tannins? Join us for an investigation on why we shouldn't like bitter things, why we do, and what the bitter world has to offer. This journey will be guided by Libation Enthusiast and Sommelier Dan Morton who, along with his wife Laurie, curates the amazing collection of alcohol at Hand+Foot on Market Street. If it's in their cooler, they feel it's the best. Dan has been in the beverage business for many years and has a well-rounded, diverse, and sometimes tempestuous appetite for anything boozy. And he lives to share! Snacks included.

Louise Richardson is one of the busiest caterers around because her way with “tasty tidbits” is so winning. She will share her know-how and recipes for savory and sweet “finger-food” (think one-or-two-bites), perfect for light entertaining – cocktail parties, receptions, or just an appetizer before dinner. And you just might make dinner out of several of these – served at home, on the deck, on a picnic or by the lake. The emphasis is on mapping out a plan that doesn’t trap you in the kitchen while everyone else mixes and mingles. Also included will be information on timesaving strategies, tools, techniques, and sourcing. Louise has planned to feature new recipes, so if you came to the hors d’oeuvre class in 2015, come again!
